For monks within Christianity:

In the Roman Catholic (Benedictine/Cistercian) tradition:

for a monk who is not a priest use the title "Brother"

also, a monk, once he has made vows is called "Dom" (or "Don") in some places (particularly in the Cistercians and some Benedictine congregations).

If a monk is also a priest he is called "Father"

The abbot is referred to as "Father Abbot" or "Reverend Father"

in Eastern Christianity (Orthodox Churches and Greek Catholic Churches) there are different traditions for addressing monks, and I am not competent to answer for that tradition since I come from the Roman Catholic tradition.
