How do you change the colors on a mac mini screen?

This seems like it is a hardware issue- not software. This basically means you can't do anything about it, apart from give it to a repair store.

There is an exception though; maybe a colour option of sorts was accidentally pressed in the System Prefercences, in which case go though said app, looking for anything that might have caused this

The colors are controlled by the software on the computer and some controls directly on the monitor.

Try going into the System Preferences under Display's or Monitors and try the Calibration and see if it fixes your problem.

If it's not exactly black and white, more like a film negative, you can hit Command+Option+CTRL+8 and it should go back to normal.

*The Command key is the key with an Apple logo on it.

IF the screen really is just black and white, check your color settings in System Preferences > Display. Make sure they're set to their defaults.

Also, check in System Preferences under the Universal Access tab. I think it's under the Seeing tab, but there's a check box for Black and White.
