To change the screen saver on an Apple Watch Series 2, open the Watch app on your paired iPhone. Tap on "Face Gallery" at the bottom, then choose a watch face you like. Customize it by selecting different colors, styles, and complications, then tap "Add" to save it. The new watch face will automatically sync to your Apple Watch.
