One way is to use the TODAY function :
=TODAY()
Any day you open a workbook with that in it, it will always show the current day. You can also use the NOW function, though that will also show the time. Another thing you can do is press and hold the Ctrl and Shift keys and press the ; key. That will put in the current date, though it will not update the date if the workbook is saved and opened on another day, unlike the TODAY function.
