Different versions of Excel have different views for which they have buttons, but the main ones are:
Normal
Page Layout
Page Break Preview
Custom Views
Full screen view
You cannot. The whole point of Excel Viewer is to be able to read-only view an excel spreadsheet, even though you do not have Excel. You will have to purchase or find a copy of Excel if you wish to edit the spreadsheet.

Open the View menu and then Toolbars and then the Control Toolbox toolbar. From that you can draw a Command button. A button can also be drawn if you use the Forms toolbar.
Excel provides 3D charts, if that is what you are referring to, but so do many other spreadsheet applications. So you do not have to have Excel to view 3D charts.

In Excel, there is no need to change the number of columns, just move left or right (or change the percent of view) on the page.
All views contain rows and columns. The default view is called the Normal view.
