The different bikes have different advantages and disadvantages. An example is the silver bike and acrobatic bike. The acro is more flexible it can to flips and all that stuff. Silver is faster but not as flexible.
Don't really know what you mean by all-terrain. A race bike is basically any bike that's considered good enough to be used in competitions - regardless of what kind of bike it is, MTB XC, MTB AM, MTB DH or whatever.

A good bike to use in a time trial road race would have to be a time trial bike. It is a racing bike that is designed for use in a individual race. They do have racing bikes also.

Any bike can be used to race. The XR80R is a 4-stroke engine so even though it is an 80R, it is not traditionally considered a race bike. The Honda CR series are considered race bikes. They are 2-stroke engines.
Race bikes are rarely sturdy, as race bikes usually need to be light. Apart from that there's no single answer to that, as there's too much personal preference involved in picking a best bike. Might as well ask for the best band, pizza or soda.
Because different geometry create different ride characteristics, and depending to the type of riding people want to do the want a bike that fits their use. A slacker head tube angle makes for a more relaxed steering respons. Good for cruisers, Dh bikes and touring bikes, not so nice for a road race bike.
