Well basicly because the elephant has no preditors so elephants are usually calm and so have a low heart rate,but a rat has to be fast and have faster reactions and so they have a faster heart rate.

I think it's because an elephant's heart is alot larger than a man's, weighing 12- 28kg, so it has more power to every pump. a human heart only weighs 8 - 12 ounces (which is around 0.283....kg). Not completely sure that's correct, but its the only answer i can come up with. Hope this helps ;)
