Most users wont find any real benefits from upgrading. Probably have more headaches than anything actually being honest with having to get used to the new interface.
There are a few new features and a new interface and what-not, but office 2003 was/is a very good office program. Its fast, its reliable and its not lacking in any way.

You would need to unistall Office 2007. To do that go to the control panel/Programs/Add remove programs/ click on office 2007 and remove it. Then if you have not unistalled office 2003, it should still be there.
