There are 6 volt car batteries, but you are only likely to encounter them in really old cars, like late 50s early 60s.

when batteries are new never use mixture water but when batteries become old and weak then you need to add mixture water

Yes, it should shut off when the batteries are fully charged. If not it is either a very old charger or it is defective. You do not want to overcharge the batteries so use a charger that shuts off automatically.
