Rice noodles are very similar in taste, appearance and texture as cellophane (bean) noodles. BUT cellophane noodles have almost 3 times the carbohydrates, more than twice the calories, and less protein. So for the health conscious, I would stick to rice noodles unless you are lifting some serious weights, or running marathons.
