I don't think it's a good idea. Scratch is made for the digestion of poultry, which is vastly different than the complicated gut of a horse. I'm all for giving my horses treats, but always apples, carrots or horse cookies made for horses. I would advise to leave the scratch to the chickens.
Yes they do but it's not very popular. The French prefer to feed the sweetcorn to their poultry and then eat the poultry.

Rats will eat anything they can find to sustain their lives. Rats are opportunistic feeders and anything that is edible is fair game.
It depends on the horse. If your horse is fat then you need to cut down on the horse feed, but if your horse is too skinny then you need to increase their feed until the horse gets back up to his/her weight.
