In my experience I've had no trouble, unless the handles are wood, plastic or anything that could melt. They can often be removed temporarily. One problem comes when the pan is on top of the stove on a glowing electric element or possibly a gas burner with nothing in the pan. The bottom is only glued on and will pop off. I imagine if the food burns and there is no water left, the pan should act badly. It's too bad all electric ranges don't have timers for cooking on top of the stove.

Enameled cast iron, glass, and glazed clay vessels are also nonreactive in this sense, but are brittle and thus more easily damaged than stainless steel.
