½ cup golden syrup

100 g unsalted butter

1 teaspoon brandy

½ cup brown sugar

80 g flour

1 teaspoon ground ginger

Preheat oven to 160°C.

In a large saucepan, melt the butter and add the golden syrup and brandy.

Add the dry ingredients and mix.

Bake on a tray lined with greaseproof paper, until dark brown and blistered.

Cool for a few minutes and while still warm roll into a cylinder around wooden spoon handle or other round wooden object.
