How do you know when the temperature of the pan is right to cook pancakes?

When you are making pancakes the start to bubble on top then you flip them and wait about two minutes for them to finish. When you make muffins you check them every few minutes and when the top is golden brown then they are done...make sure by stinking a toothpick in the middle..to make sure it's done.

For American pancakes, when pancakes are ready, both sides will be deep golden brown. If they are American pancakes (i.e thick pancakes), they will be well risen. There will be no traces of uncooked batter visible on the edges of the pancake - this is a good indicator that they are fully cooked. However, if it does turn out that you have undercooked your American pancake, you can just stick it in the toaster for a few minutes to finish it off.

For English and French pancakes (sometimes called crepes), they will be a pale golden colour with a smattering of dark brown dots on both sides. These are the very thin pancakes which do not rise, but the advantage of this is that they cook quickly. In practice, it is not really possible to serve these undercooked, since in order to transfer a crepe to a plate for serving requires that it is fully cooked so that it does not fall apart.
