Yumm...salt potatoes. They are a Central New York delicacy. I'm taking some to a b'bqe tonight.
You need 4 quarts water, 1 lb salt and 4.5 lbs small new potatoes.
Put the potatoes in the water, then pour in the salt.
Boil for 15 to 30 minutes (it depends on the size of the potatoes) until tender.
Drain the potatoes and place on a rack to cool for 5 minutes. The salt will begin to crystalize on the potatoes.
Serve with melted butter for dipping.
Enjoy.
