according to Alton Brown it is only necessary to have the internal temp. to 145 that will insure that it is safe to eat. Higher than that it becomes way over cooked.

If you are baking in the oven, 350degrees for 35min. If on top of the stove, simmer on low heat in heavy skillet for 45min.

Brown the chops 1st in a little evo. Add soup and cover. simmer for about 45 minutes or until chops are tender. pork should have an interanl temp of @ least 170*. hope this helps?
