Approximately 25 grams per ounce (this is the standard cookery conversion, used in cookbooks). One ounce is actually 28.3... grams, but for small batch cooking the (lack of an) extra 3 grams makes no difference. It's when you start making huge (industrial scale) quantities that the extra three grams should be taken into account (i.e use a 28 gram = one ounce, not 25 grams).
