List the seven components of food, and identify common foods that contain each component.

1. Proteins; such as milk, meat, fish, poultry, and eggs (Actually all food contains protein in varying amounts. Most forms of vegetable protein and cooked or heated/treated animal protein are incomplete so they must be combined with other foods that complement the amino acid [protein] content that they lack.)

2. Carbohydrates

a. Simple sugars; such as fruits

b. Complex carbohydrates; such as grains, fruit, and the stems, leaves, and roots of vegetables

(Foods don't have to taste sweet to have a high carbohydrate content.)

3. Lipids (fats); such as saturated fats found in whole milk, egg yolks, meat, meat fat, coconut and palm oils, chocolate, regular margarine, and hydrogenated vegetable shortenings

4. Vitamins; such as folic acid found in dark-green leafy vegetables, beans, and fruit (The best source of vitamins and minerals are, coincidentally, the fresh sources of food that are highest in dietary fiber.)

5. Minerals; are found in almost all food, especially fresh vegetables

6. Phytochemicals; such as vegetables and fruits that contain chemical substances (Phytochemicals are not one of the 7 components of food. This list is missing DF, or dietary fiber.)

7. Water; such as body water which should be replaced by consuming pure water, milk, or real juice
