Shortening is simply solid culinary fat like butter, coconut fat, lard, margarine or kremelta which is added to pastry (or biscuits like shortbread - "Mama's little baby loves shortenin' bread").

The more fat that is added in proportion to the flour the shorter (and more crumbly) the pastry will be - but it won;t hold together successfully unless you add an egg or water as well.
