What is a cipaille?

A cipaille or cipate is a dish from Eastern Québec (Gaspésie-Bas Saint-Laurent) which consists in different kinds of meat (usually a combination of 3 of the following: moose, deer, beef, pork or chicken) with spices, potatoes and onion, and layered with a dough. The original Cipate (from six pates = six doughs) had six layers and was usually cooked from big family feasts for Christmas.
