The meat (in terms of taste and texture) is no different between the two different methods of slaughter. However, halal provisions of dhabiha (slaughter) require two holes to be created in the throat to drain the animal of blood where as jhatka requires that the animal's head be hacked off in one go. Dhabiha leaves less blood inside of the animal.
