A 383 stroker engine typically runs best at an operating temperature between 180°F to 210°F (82°C to 99°C). Maintaining this temperature range helps ensure optimal performance, fuel efficiency, and longevity of the engine. If the temperature consistently exceeds 210°F, it may indicate cooling system issues or other problems that need to be addressed. Always consult your engine's specific guidelines or a professional for accurate recommendations.

There is really no "normal operating temp." on a stroker motor. The ones that I have built usually run arount 200 degrees. You should try to make sure that your cooling system is in very good condition. If you have to buy a new radiator get the one rated for a towing package for your vehicle.
The bolt holes are in the same place, but the larger combustion chambers and big valves would probably make the 305 run like crap.
It depends on the cam size, heads, and other factors. 60 to 80 pound injectors will be a good starting point.
