Baking soda is sodium hydrogen carbonate (sometimes called sodium bicarbonate) Na HCO3. This is an ionic compound consisting of a sodium cationion and a hydrogen carbonate anion. Its a white crystalline powder.
It works in baking because it decomposes above 700 C
into carbon dioxide, water and sodium carbonate.
