Every country is made up of different ethnic groups. For example, in the United States, we are all Americans, but our ethnic groups include African-Americans, Asian-Americans, Irish-Americans, Hispanic-Americans, etc. (based on where our ancestors came from). Each ethnic group brings with it certain traditions, customs, and ancestral stories. While members of these groups may indeed have assimilated into the wider American culture, there are ethnic restaurants which feature the foods of the "old country" or holiday celebrations around a certain patron saint or religious tradition, or crafts and articles of clothing that are native to a certain country, and even slang expressions that come from the way their language was spoken in the group's country of origin. Thus, a country's ethnic groups can influence the commerce, the language, and the celebrations of the entire country; or (depending on where a certain ethnic group lives), it might just influence particular portions of that country.

Kurds are an ethnic group mainly from mountainous regions in Iran, Iraq, Syria, and Turkey. They have their own distinct language, culture, and regional identity.
It depends on whether you consider "Arab" to be a united ethnic group or if it is divisible along ethno-religious lines. If Sunni Arabs and Shiite Arabs are distinct ethnic groups, then Sunni Arabs form Iraq's second largest ethnic group (after Shiite Arabs). If the Arabs are a united ethnic group, then the Kurds form the next largest ethnic group.
