Among other things, the Inuit ( which is what 'eskimos' call themselves) invented the Kayak, the Toboggan and the Ulu knife ( a special small skinning knife). - Many great things about the Inuit can be seen in the British Columbia Museum of Anthropology in Vancouver. -Well worth a visit.

The Inuit traditionally used tools like harpoons and fishing spears to catch fish in rivers, lakes, and the ocean. They also used traps made of stones and nets made of sinew or grass to catch fish. Ice fishing was common during the winter months, where they would cut holes in the ice and use tools to catch fish beneath.
They could travel with either Sled dogs (which was pretty popular for the Inuit's) or they could travel on Kayaks for travelling on water. In case you need to know what they are made of, sled dogs are made of just wood (they could carve it with their tools) and regular dogs. Kayaks are made of driftwood and sealskin together. Hope this helped!
they used bones to make most of their tools
