Usually people with special dietary needs will inform staff before their arrival, to ensure that their meals are suitable (if the dietary need is quite specialised). Alternatively, they may take their own food if this is considered easier. However if the dietary need is not too drastic (for example "nut free" is quite easily manageable), informing staff before arrival may not be necessary, as it can be quite easily accommodated normally.
