In the asssumption that you mean deep fried french fries, similar to those served in most restaurants (including fast food), then that depends on what they are deep fried in.

Peanut oil, though uncommon to fry french fries in, has the highest fat content. Vegetable oil has the least fat content. Most restaurants use some form of oil blend, so it really varies from place to place.

Now, it is possible to bake and possibly broil julianned potatoes, which will dramatically reduce the fat content to near zero, though you won't get that same delicious fatty filled taste that the deep fried versions offer.
