It's a natural amino acid bound to sodium. I don't know if monosodium glutamate (MSG) occurs in nature, but it's no more unnatural than the common mineral supplements chelated with an amino acid for better absorption.
However, even if something is natural it doesn't mean it's healthy. Mercury is natural, but very toxic. The active component of MSG, glutamic acid, is an excitatory neurotransmitter and if excessive amounts get into your brain it can cause dysfunction, damage and even death to some brain cells.
Some people are very sensitive to MSG, such as myself, and I will have trouble thinking, be very fatigued and sometimes get a headache if I eat MSG. When I was less sensitive, MSG still gave me severe social anxiety and depression.

The anchovises that are fermented to go into it contain natural MSG and the fermentation process just amplifies that, which is the entire point behind the fermentation process. If you don't believe just look up how much msg do anchovises contain naturally. Salt is a natural mineral that enhances flavor and is essential for bodily functions, while MSG (monosodium glutamate) is a flavor enhancer that some people may be sensitive to, potentially causing adverse reactions. Salt has been used for centuries in cooking and preservation, making it a more traditional and accepted ingredient. Additionally, excessive MSG consumption has raised concerns about health effects, leading some to prefer salt for its simplicity and safety. Overall, salt is often viewed as a more natural and universally acceptable option compared to MSG.
Almost every commercially bottled sauce you can buy will contain MSG. There are few exceptions and unless you know what you are looking for you may never know. A good rule of thumb when looking for sauces without msg, if they are not labeled msg free, is if it contains something you don't recognize it probably has msg. Some ingredients that are msg without saying msg are: natural flavor, flavor enhancer, autolysed yeast, autolated or autolysed anything, hydrogenated vegetable protein, among hundreds of others. Three products on the market that are pure or near pure msg are Accent, Marmite, and Vegemite, the first a powder the other two are pastes.
