They'll starve to death on a full stomach. Sounds like an oxymoron because it is. A cow that eats lots of really low quality forage for a long period of time will starve to death on it because she's not going to get out any nutrients from forage that is primarily made of fibre and cellulose. Instead she'll be relying more on her bodily reserves (being fat and muscle) in order to keep functioning, but eventually these resources will run out, resulting in a very emaciated cow and one that is about to die. A cow needs a lot more than something with lots of fibre, she needs something that has energy, protein, water, vitamins and minerals in order to survive, thrive and keep at a healthy weight.

Because they don't need to. They drink water and are able to eat roughage and grains to get their nutrition.
