Well, this question is a little subjective, as all vegetables have something to offer. But, of course, some vegetables are provide more nutrition than others.

If I had to choose, I would say that Kale is the healthiest vegetables you can eat. Lots of vitamins A, K, and C, as well as lots of dietary fiber, protein, phytonutrients, and other trace minerals. Eat a cup a day for maximum health benefits.

Carrots, broccoli, garlic, and sweet potatoes tie at a close second, though.
