Diabetics have better blood glucose control when they consume foods that are low in the glycemic index. Pasta of any type cooked to the el dente stage (relatively firm) has a lower glycemic index than the same pasta cooked soft. Mixing the pasta with a meat and veggie sauce further helps to slow down the conversion of the complex carbs to sugar, thus keeping the blood glucose levels more even. We have had fantastic luck keeping our 11 yr olds sugars more stable by using foods that are low in glycemic index. It's been a miracle for us.
