Hydrogenated lard, or other hydrogenated oils are high in trans-fat, which is extremely bad for ones cholesterol profile and heart health, would be the worst. Unhydrogenated Coconut oil would probably be the next worst, as it is very high in saturated fats. Unhydrogenated sunflower, safflower and soybean oil would be next, followed by canola and olive oils, arguably the best. Most fast food chains use hydrogenated oils, though this is changing. Still, french fries are by no means a healthy food even when fried in less harmful alternatives- they are extremely high in fats and very dense in calories for a rather nutritionally-limited product.
