I don't know if I would say that carrots guard your health but carrots are a source of vitamins, phytochemicals or plant chemicals, minerals, fiber and water. These ingredients help to nourish and keep the body strong. For example, if you ate 8 small baby carrots, you would get about 80 calories. In this serving you would also get calcium, iron magnesium, phosphorus, potassium, sodium, zinc, copper, manganese, selenium, vitamin C, B vitamins, a lot of vitamin A and plant chemicals -- alpha carotene, beta carotene, lutein and zeaxanthin. Most of these are in small amounts except for the plant chemicals and vitamin A. Carrots also offer some fiber and it is low in calories. With a portfolio of all of these nutrients, I would say that carrots are an excellent addition to the diet to help keep us healthy. They are also easy to eat as a snack and they taste good.
