Monounsaturated fats are more stable for cooking (olive oil) and should represent about 90% of your fat intake. Polyunsatruated fats substantially reduce Heart disease risks, but should be relatively fresh to prevent a speculated increased risk of cancer. A very small handfull of walnuts, sunflower seeds or pumpkin seeds per day can meet the 5% intake.
