There are dozens (perhaps hundreds) of different ways of achieving the ability to shape shift and depends entirely on what belief system you're working from and there's no answer that wouldn't take a book or twelve to answer. However, most shape-shifting involves similar steps:

Ritual cleansing: a bath, meditation or any other practice which will calm you and separate your mundane "human" self from your "animal" self

Identification: surrounding yourself with symbols (including pictures, stories, sounds, etc) of the animal you're trying to turn into it.

Meditation: deliberately imagining yourself as transforming into the animal. If, for instance, you wanted to become a wolf, you might imagine your body sprouting hair, your nose growing longer, teeth getting sharper and so on.

Transformation: This part is nearly impossible to describe. I personally have never done it, now known anyone who has attempted it, but theoretically at this point, you should actually become the animal.
