I would be willing to suggest Saint Sebastian as he is the patron saint against those who suffer from illness. If we consider vampirism to be effected by some sort of contagion then I think this would fall in his realm.

They say vampires are preserved but smell terrible, which leads me to believe they were just talking about badly decomposing corpses. Not real vampires. ('Cos crosses do nothing, garlic is nice). Still, a saint for vampires would need to be one themselves, but the Church isn't going to like that idea, are they?
