Because people have been brainwashed in their set religious ways. There are many reasons why people don't believe in magic. Many people have unrealistic expectations of what magic actually is. Hollywood and various other stereotypes have distorted the view of what magic is in people's eyes. With the rise of organized religions, especially Christianity, magic was deemed to be evil. From youth people are exposed to many negative or incorrect images floating around of what magic is. Witches are portrayed as evil, ugly women who practice magic by casting spells on the innocent. They are said to sacrifice animals and worship the devil. Though this couldn't be further from the truth, these stereotypes are what people grow up with and often times this affects their perception of magic. Also, people watch magicians perform "magic" and people get it into their head that being able to make a salt and pepper shaker disappear is really what magic is about. In today's world science and logic are the tools to solving problems. Science tells us what occurs and why it occurs. Logic is a tool used by scientists to explain why things occur. Magic is usually deemed to be paranormal. It usually isn't seen as being scientific. Often times people won't believe in magic since scientists can't explain it. Plus if people don't truly understand what real magic is, how can they truly believe in it? Ask a random person if they believe in ghosts. Often times people will say no, but then tell that person to go into a haunted house and they will most certainly refuse. Why? Because people are afraid of the unknown. Magic still is very unknown to people and some are afraid of it because of stereotypes.
I guess the strongest evidence for not believing in UFOs would be that they haven't landed and introduced themselves. For some people to believe they would have to see the beings.
