The kiln firing also brings the moisture content down to 2% - this will ensure that the tea is effectively preserved.

Lots of reputable companies will flash heat their tea at regular intervals prior to blending. However smaller one person supplier might not have this capability.

Look for signs of good storage process, using a reputable or reliable supplier helps
