I've seen some seriously old bottles of Scotch that have lost a couple of cm's through the seal from evaporation, but if you keep a bottle at the same cool temperature year round it shouldn't happen. If it's an open bottle you may notice a difference due to oxidisation after a few years or loss of colour if it's left in direct sunlight. But if it takes you that long to drink an open bottle of Scotch then you probably wouldn't care much about it anyway!
