There is no difference, because you do All-Star mode to get the final smash trophies for all of the characters. Completing All star with Every Character is different because Zero Suit Samus is the same character as Samus and Zelda is the Same as Shiek. To collect all final smash Trophies for all characters, you have to play as Samus, Zero Suit Samus, Zelda, Shiek and the other thirty three characters. There is another difference, playing co-op gets final smash trophies but not "completing all-star".
