A cask conditoned beer that is not pasteurised or filtered, but continues to ferment in the cask. This process is known as secondary fermentation which give a real ale its character and flavour. It is made from malted barely or sometimes wheat, hops, yeast and water. Sometimes sugar is added (usually brown sugar) for extra strength, but no rice or chemical additives.
