Then, for optimal coffee extraction, the brewer should maintain a temperature of 195 - 205 degrees Fahrenheit (90 - 96 degrees Celsius). Lower temperatures will result in underextraction and a flat flavor. Higher temperatures will cause a loss of flavor quality.
