What are the microorganisms of the rumen?

The microorganisms found in the rumen of a ruminant animal consist of the following:BacteriaProtozoaFungiBacteriophage (bacteria virus)MycoplasmasMethanogensThere are three types of microbes: 1% that have attached themselves to rumen epithelial cells, 20 to 30% which are free-floating in the ruminal fluid, and 70-80% which have attached themselves to the tiny feed particles floating in the ruminal cavity. All are an integral part of the ruminal ecosystem and play a role in ruminal ecology in maintaining a diverse and healthy population of micro-organisms.

What is a goat's rumen?

The rumen acts as a big fermentation vat. Bacteria and protozoa in the rumen supply enzymes to break down the fiber in the goat's feed. This is similar to how bacteria can ferment the sugars in grape juice to make wine in big wine barrels. The tiny organisms in the rumen also help to build proteins from the feed and manufacture all of the B vitamins needed by the goat. Many nutrients that help provide the goat with energy are also absorbed here. The fermentation process produces heat that helps to keep the goat warm.

What is the chamber in a cow's body where bacteria break down chewed up grass?

That would be the rumen, which is the first chamber out of four in a cow's stomach. The other three chambers are the reticulum, omasum and abomasum.

Do sheep have a cardiac sphincter?

Yes, they would have to, otherwise the digesta from the rumen and reticulum would be free come up if the stomach compartments get quite full. It is found at the junction between the esophagus and the ruminal/reticular junction. When a bolus of cud is to be regurgitated, the sphincter muscle relaxes and allows the cud to come up to be chewed, and relaxes again to allow the rechewed bolus to be returned to the rumen. Cardiac sphincters are also found between most of the chambers in the ruminant animal for the same reason as stated above.
