The surface of a Mentos is not smooth; it has microscopic pits, or nucleation sites, on it. These pits cause the CO2 in Diet Coke to come out of solution very quickly at the bottom of the bottle. The result is rapids release of the CO2 and foam in an explosion. This is actually the physical change that occurs. Due to the addition of caffeine, potassium benzoate, and Aspartame with the CO2 in the Diet Coke, the reaction is much greater--this would be the chemical change.
