Gravity, with a force holding you to a sphear and the inability to counteract that force a sphear presents no edges to fall off of other than closer to the sphear if it is not a perfect sphear like the globe,.

Antarctica doesn't fall off because, as far as gravity is concerned, it is not "down" from the rest of the planet. Gravity, which is the force that holds you to the ground instead of letting you float off into space, pulls everything "in" towards the center of the earth.
