It IS renewable in the sense that volcanic forces are always creating new rocks and stones deep within the earth. However, since it takes millinia for formation and exposure on the surface of the earth, it is considered to be non-renewable. It simply takes too long for stone to form to be considered a renewable natural resource.

Earth's supply of granite is virtually inexhaustible, but technically, it could run out even though more is being made every day.

The forces creating gravel are constantly at work. Is gravel being created at a rate equal to its use? I strongly suspect so. Therefore, it would be renewable.

It's non-renewable, because if we dug it all up, more would not form over the timescale of human life. That doesn't mean it's necessarily in short supply.
