You would find granite in the continental crust.
Well, beneath granite you would find any layer of Mafic igneous rock. Basalt is the most common Mafic rock, so that's a good start. It's what you will typically find forming the ocean floor as well as the heavy layer of the earth's crust beneath the granitic layers.

Granite and basalt are both igneous rocks - they are formed from magma extruded into another rock layer or from expulsion from a volcano. The heat of the cooling rock would completely melt any fossils they came into contact with and destroy them, so you don't see fossils in these rocks.
