Temperature is simply a measurement of the degree of hotness. So plants don't need temperature, they need temperature that is above say 100C.

The temperature must be above a certain amount - which is different for different plants - because all living things are basically a lot of chemicals and these chemicals react with one another to produce growth or movement. Chemical reactions are slower at lower temperatures and may stop altogether if the temperature drops too low.
