There are no associates degrees that are particular to individuals 55 years of age or older (that I am aware of). Although, some colleges do have support programs for adults returning to education. That being said, I am a professor and have worked within higher education for 26 years in a number of positions to include Director of Admissions. Listen, learning is forever! It does not matter how old you are. I have individuals in class ranging in age from 18 through in their 70s, and you know who my best students are? The mature adults. They have life experience and bring a wealth of information to the class. They bring with them excitement, enthusiasm, and an energy that makes them valuable role models for the younger students. I cherish the mature adult students and what they bring to the class. If you have a passion to learn, then do it! I applaud your effort and encourage to take advantage of the resources available to you. A community college would be a great place to start.
