Two important points:

  1. The school should have policies around this question, and it would not be inappropriate for you to ask to see those policies. If the teacher correctly followed policies and procedures, then that's that. If the school does NOT have any policies and procedures on this issue, then that is a shortcoming on the school's part that needs to be looked at.
  2. Anyone can make mistakes, including teachers. If the change is because of an honest oversight or error, and if #1 above is met, then it seems there is little you can do. Even if the teacher met policy standards, if you believe the change was made for something OTHER than a legitimate error by the teacher or some other exception allowable by school policy, (*just as a possibility, the school might allow a change if it is discovered after the grade deadline that a student plagiarized on a paper that was given a good grade) you should report your concern to the school's administration.

*If I were a school administrator, then the passing of a grade deadline would never justify keeping a good grade on plagiarized material or on material obtained by any form of cheating. I think that allowing such a grade to stand for the frivolous reason of a passed deadline would amount to complicity in the dishonest act.

If you have a c in a class but got an A on a quiz then what's your final grade?

Your final grade would depend on how the teacher grades. For example, how many points is the quiz? How many points are possible for the semester? What are the weights for homework, quizzes, essays, and projects? The information you provide is not sufficient enough to answer the question. Your best bet would be to ask the teacher him/herself.
